Food Safety in the Dairy Sector

Purpose: This course aims to build on the experience from the Danish dairy sector and the food authorities in Denmark to evaluate local food chains spanning from primary production to final product, as well as implement the knowledge from the Danish experiences into dairy farming on a global level.
Content: Combined with lectures on food safety, regulations, and surveillance, the course will have multiple visits to farmers, dairies, authorities, and stakeholders. Together, this will provide participants with both theoretical and practical knowledge as well as first-hand experience of the Danish dairy industry and the relevant frameworks. There will further be a focus on solutions to dairy challenges that may be implemented locally. Participants are expected to reflect on how course content can be translated and implemented to their own context.
Target group: The course is highly relevant for a diverse group of professionals with an interest in food safety, working in universities, public authorities, and private companies. Participants are expected to hold a bachelor’s degree in a relevant field.
